Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 16 oz can kidney or chili beans, drained
- 1 15 oz can corn, (or used 2 cups of frozen corn)
- 1 15 oz can tomato sauce
- 1 15 oz Rotel diced tomatoes with green chiles, or substitute salsa
- 1 packet taco seasoning mix
- 1 c shredded cheddar cheese, or Mexican blend cheese
- 3½ c corn chips
- 1 â…“ c sour cream
- 2-3 green onions, chopped
Instructions
- Cook ground beef and onion until meat is browned and onion tender; drain.
- Stir in beans, corn, tomato sauce, taco seasoning mix, Rotel or salsa, and 1/4 cup (per recipe) cheese.
- Sprinkle 1/2 the corn chips in bottom of 9" x 13" baking dish.
- Cover with the chili mix, and a layer of cheese.
- Bake at 350° for 20-25 min.
- After the initial bake, spread sour cream over the top of the chili and top with another layer of corn chips, and then diced green onions.
- Bake 3-4 minutes longer.
