Sour Cream Chili Bake

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 16 oz can kidney or chili beans, drained
  • 1 15 oz can corn, (or used 2 cups of frozen corn)
  • 1 15 oz can tomato sauce
  • 1 15 oz Rotel diced tomatoes with green chiles, or substitute salsa
  • 1 packet taco seasoning mix
  • 1 c shredded cheddar cheese, or Mexican blend cheese
  • 3½ c corn chips
  • 1 â…“ c sour cream
  • 2-3 green onions, chopped

Instructions

  • Cook ground beef and onion until meat is browned and onion tender; drain.
  • Stir in beans, corn, tomato sauce, taco seasoning mix, Rotel or salsa, and 1/4 cup (per recipe) cheese.
  • Sprinkle 1/2 the corn chips in bottom of 9" x 13" baking dish.
  • Cover with the chili mix, and a layer of cheese.
  • Bake at 350° for 20-25 min.
  • After the initial bake, spread sour cream over the top of the chili and top with another layer of corn chips, and then diced green onions.
  • Bake 3-4 minutes longer.
