Pasta e Fagioli Soup from Olive Garden

Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 cup julienned carrots
  • 1 cup chopped celery
  • 2 cloves minced garlic
  • 1 can diced tomatoes, 28 oz
  • 1 can kidney beans, 15 oz, with liquid
  • 1 can great northern beans, 15 oz, with liquid
  • 1 can tomato sauce, 15 oz
  • 12 oz V8 juice
  • 1 Tbsp white vinegar
  • 1 ½ tsp salt
  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp pepper
  • ½ tsp thyme
  • ½ lb ditali pasta, salad macaroni

Instructions

  • Brown ground beef and drain fat.
  • Add onion, celery, carrots, garlic and sauté for 10 minutes.
  • Add all ingredients except for pasta and simmer for 1 hour.
  • Cook pasta and add to soup. Simmer for 5-10 minutes more.
  • Optional: Sprinkle with parmesan cheese
