Dylan's Carob Cake

Ingredients

  • ½ cup butter, softened
  • 1 ¾ cup brown sugar
  • 2 eggs
  • ½ cup carob powder
  • ½ cup water
  • 2 ½ cup flour (white or wheat), sifted
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp instant coffee
  • â…” cup buttermilk
  • 1 ½ tsp vanilla
  • â…” cup chopped nuts

Instructions

  • Cream shortening (butter) with sugar well.
  • Add eggs, beat until fluffy.
  • Blend carob powder with water. Stir into creamed mixture and mix well.
  • Combine dry ingredients separately, sifting three times.
  • Add dry ingredients a little at a time, alternating with the buttermilk. Blending after each addition.
  • Add vanilla and nuts.
  • Pour into 2 8" greased cake pans. 350℉ for 30-35 minutes.
