Ingredients

  • 4 boneless skinless chicken breats
  • 1 can can cream of chicken soup, 10.5 oz
  • 1 can chicken broth, 10.5 oz
  • 1 pkg stuffing mix, 12 oz
  • ½ cup chopped celery
  • ½ cup chopped onion
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • ½ cup water, optional, for more moisture

Instructions

  • Place chicken breasts in crockpot bottom and season with salt, pepper, garlic powder, and thyme
  • Whisk cream of chicken soup with chicken broth until smooth, then pour over chicken
  • Combine stuffing mix, celery, and onion in separate bowl
  • Spread stuffing mixture evenly over chicken and soup layer, pressing gently
  • Cover and cook on low 6-7 hours or high 3-4 hours until chicken is tender
  • Shred chicken with forks and mix with stuffing before serving
  • Garnish with fresh parsley if desired
