This is a cornbread-based chili casserole. The base is made from ground beef and kidney beans.
This Mexican-inspired casserole uses chicken (shredded or cut), black beans, fire-roasted tomatoes, corn, and cream of chicken soup. The casserole is topped with crushed tortilla chips and cheese.
This is not a family traditional recipe, but it IS one of my personal favorites. We use Dylan’s mashed potatoes for the topping, but do add the parmesan cheese for that.
